Wonderfoam accelerates global expansion as demand grows for egg-white alternatives

Category-leading cocktail foamer Wonderfoam continues its international expansion, securing listings with around 2,000 venues worldwide and establishing a presence in some of the world’s most influential bars.

The Australian-born brand has become one of the leading alternatives to traditional egg whites behind the bar, with its rapid global growth reflecting wider industry demand for products that improve operational efficiency, reduce waste and meet evolving consumer preferences.

Recent momentum has been driven by the addition of Drinks99 to Wonderfoam’s international distribution network, helping the brand expand significantly across China and Hong Kong. High-profile venues, including Bar Leone, COA, Speak Low, Sober Company, EPIC and Rosewood, have all adopted the product, further strengthening its credentials among Asia’s leading cocktail destinations.

Wonderfoam’s growing footprint now extends to numerous venues featured in the ‘World’s 50 Best Bars’ rankings, highlighting the increasing acceptance of cocktail foamers among some of the industry’s most respected bartenders.

The latest growth follows the launch of a new formulation and complete brand refresh, designed to support the company’s ambitions in international markets.

Addressing modern bar challenges

Originally developed by bartenders seeking a more practical alternative to egg whites, Wonderfoam was created to help operators respond to changing consumer expectations while improving speed of service and reducing costs.

The highly concentrated liquid requires just three to five drops per cocktail, with a single 100ml bottle capable of producing more than 500 drinks. Added before shaking, the product creates the silky foam traditionally associated with cocktails such as the Whisky Sour, Clover Club and Pisco Sour.

For operators, the commercial benefits are significant. Compared with eggs, Wonderfoam offers lower cost-per-serve, eliminates concerns around food safety and delivers a consistent result every time.

Sustainability and waste reduction

As bars increasingly focus on sustainability and operational efficiency, reducing waste has become a key consideration. Wonderfoam’s two-year shelf life offers a clear advantage over fresh eggs, particularly for lower-volume venues where ingredient wastage can impact profitability.

The product has already transformed the Australian market, where it has become a preferred alternative to both egg whites and aquafaba. Customers include renowned venues such as Caretaker’s Cottage, Maybe Sammy and Black Pearl.

The science behind the foam

Wonderfoam’s performance is based on Quillaia Saponins, a natural extract derived from the bark of sustainably harvested Chilean Quillaia Saponaria trees. The extract acts as a powerful foaming agent when shaken.

The company’s latest formulation also incorporates Gum Arabic and Tapioca Starch to enhance mouthfeel and deliver a texture that closely replicates the richness traditionally provided by egg whites.

The resulting foam remains stable for up to an hour, helping maintain presentation and drinking quality throughout the serve.

Opportunities beyond the bar

While the brand’s primary focus remains the on-premise, Wonderfoam is also gaining traction among consumers looking to elevate their home-cocktail experience.

In Australia, a 5cl retail format is available through major drinks retailer Dan Murphy’s, while the standard 10cl bottle is now sold via Amazon across the UK, Europe and the US.

With the global cocktail sector continuing to prioritise consistency, efficiency and waste reduction, Wonderfoam appears well-positioned to capitalise on growing demand from both professional bartenders and consumers.

As international distribution expands and awareness of the category increases, the company believes there is a significant opportunity for cocktail foamers to become a standard fixture on backbars around the world.
