UK start-up Linden Leaf is taking its laboratory-based approach to spirits to the US, with 88 Organic Molecular Gin and Singularity Organic Molecular Vodka lined up for release this month.
The pair, which debut in selected on- and off-premise outlets in Colorado, Florida and New York, are the result of research into extracting specific molecules from ingredients used in their production processes. A “molecular flavour atlas” was created by the company that served as a guide for what to look for in ingredients, which according to the company, contribute to “the perfectly balanced gin” and a vodka with a “smooth, silky mouthfeel”.
While 88 Organic Molecular Gin features 88 flavour molecule notes from 28 botanicals, Singularity Organic Molecular Vodka has a “custom grain blend” of wheat, barley and rye along with spelt. The gin has an ABV of 43% and an SRP of US$38.88 per 750ml bottle, while the 45% ABV vodka retails for $28.99.
Linden Leaf was founded by three “Cambridge scientists”, two of whom hold PhDs from Cambridge University.
