Scottish gin producer Deerness Distillery is set to expand its operations to include whisky, becoming the third Scotch distiller on the island of Orkney.
The start-up, which was founded in 2015 by Stuart and Adelle Brown, has concentrated on its three-strong line of gins as well as a vodka and a coffee liqueur. Having secured planning permission last year, however, Deerness will join Edrington’s Highland Park and Pernod Ricard’s Scapa in distilling Scotch whisky on Orkney later this year.
Construction of a new still house and visitor facility will commence in the coming months.
According to a post on the Deerness website from May last year, the intention is to install a 1,000-litre wash still and an 800-litre spirits still on the current site. In preparation, the Browns have just launched an offer to buy 200 filled casks of its debut single malt, starting at GBP4,750 [US$5,850] each.
“Our upcoming signature dram draws inspiration from the rugged, coastal environment surrounding the site, while our plans for oat and rye whiskies using locally sourced grains showcase our commitment to pushing the boundaries of traditional whisky making,” said Stuart Brown.
