Flavour trends for cocktails in 2025 – Insights from leading bartenders

In the ever-evolving world of cocktails, staying ahead of trends is no easy feat. A recent report by Merch & Effect, a global agency specialising in insight-driven point-of-sale materials (POSM) for the alcohol industry, sheds light on what bartenders are predicting for 2025.

The agency conducted extensive interviews with renowned bartenders, including Minakshi Singh, Jon Lee, Tom Egerton and Holly Graham, uncovering the flavour innovations and techniques shaping the industry’s future.

Here are the highlights from their findings.

Hyperlocal Ingredients

  • Trend – There is a growing focus on incorporating local and sustainable ingredients into cocktails. Bartenders are championing regional flavours to tell authentic stories through their drinks. Minakshi Singh emphasises: “India has a lot to offer as a super diverse country… Local stories and connections are becoming the pillars of modern cocktail trends.”
  • Examples – Bars in the Himalayan regions are showcasing ingredients from 13 Indian states, highlighting regional produce and elevating it to premium experiences.
  • Why It Matters – Hyperlocal ingredients not only resonate with the growing demand for sustainability but also create a sense of place and culture that engages customers on a deeper level.

Clarified and Refined Cocktails

  • Trend – Clean, clarified drinks are in vogue, emphasizing purity and minimalism. Jon Lee describes the innovative use of single ingredients in multiple forms – such as mango leaf, stem, fruit, and peel—to craft layered, elegant flavours.
  • Why It Matters – This trend demonstrates sophistication and a deep respect for the craft, appealing to discerning cocktail enthusiasts who appreciate both artistry and precision.

Fusion of Savoury and Sweet

  • Trend – Umami-rich ingredients are being blended with traditional cocktail elements to create depth. Bartenders like Tom Egerton are exploring combinations like miso, tahini and mushroom-infused spirits. According to Egerton, “Simplicity is key, but complex, food-inspired flavours remain impactful in bars where authentic storytelling is critical.”
  • Example – The suffering bastard cocktail has been reimagined with unexpected pairings, such as tropical fruits with savoury spices, becoming a favourite in Asia.

Rise of Fermented Ingredients

  • Trend – Fermented items such as kombucha, vinegar, and garums are gaining popularity. These ingredients provide bold, adventurous flavours that align with the wellness movement and appeal to health-conscious drinkers.
  • Why It Resonates – Fermentation offers natural complexity while aligning with the growing demand for sustainability and functional beverages.

Nostalgia Meets Modernity

  • Trend – Nostalgia is making a comeback, with bartenders incorporating comfort flavours into innovative cocktails. Holly Graham highlights the resurgence of fun, irreverent cocktails that evoke nostalgia while staying relevant. “Nostalgic drinks remind people of simpler times,” she says, “but with modern techniques, we make them exciting again.”
  • Example – A classic piña colada reimagined with clarified coconut milk and fresh pineapple juice adds a sophisticated twist while maintaining its comforting essence.

Focus on Tropical and Rum-Based Cocktails

  • Trend – Tropical flavours and rum-based cocktails are dominating, especially in regions like Thailand and across Asia. Bartenders are embracing ingredients like tropical fruits and lighter spirits to create refreshing, indulgent drinks.
  • Why It Works – These flavours cater to the warm climates and vibrant cultures of the region, creating an instant connection with local and global audiences.

How Brands Can Stay Ahead

With cocktail trends evolving to emphasise hyperlocal storytelling, refined techniques and bold experimentation, one thing is clear: the bartender is at the centre of it all. As the most influential link between brands and consumers, bartenders are not only interpreting these trends but actively shaping them.

A few agencies, like Merch & Effect, are breaking new ground by building a network of collaborations with some of the world’s most innovative bartenders to rethink POSM entirely – designing disruptive, innovative tools and experiences that bartenders are excited to apply to these trend changes. It’s a shift from simply delivering brand-driven solutions to creating materials that align seamlessly with the artistry and authenticity behind the bar.

In a fast-changing landscape, these inside-out collaborations may just be the key to turning trends into brand growth opportunities.
